One of the best restaurants to open up this year in NYC, and America, is Nix. John Fraser's new vegetarian Greenwich Village restaurant is amazing. I'm not vegetarian, and don't eat solely vegetable dishes often, so maybe I was more blown away than most. But I love everything about Nix. Fraser's vegetables speak so deliciously, that you might never need meat again.
Start with some fresh veggies and tandoor bread and some Nix dips. Then delve into some more complex dishes, like ribbons of jicama with fresno chili and blood oranges. Jicama like you've never had before, bright, silky, refreshing. Or overnight clay-oven beets, with endives, pistachios, and yogurt. #Sensational
Avocado a la plancha, tomato water, mozzarella is awesome. Pea green dumplings, maitakes, white asparagus satisfied my dumpling addiction. #greatness
Another amazing dish is Nix's wok roasted cucumbers, jerk spices, goat cheese, kumquats. Those jerk spices reminded me more of a mole poblano, and the flavor was nothing short of magical. This is one of the best dishes in NYC.
With the overconsumption of meat being non-sustainable, Nix is one of the most important restaurants to open in America. I think this is the way dining should be headed towards. Vegetables with great flavor done right. If our World could start eating more like this, we'll be much better off. Nix is a magical place.
