The demo of the week actually took place last month, but I never got around to writing about it until now. I was invited to the Cellar of Macy's for a demonstration by Chef Kaegan Welch, one half of the catering company Stuart & Welch. (Michael Steifman is the other half, and managing partner.)
Chef Welch demonstrated a great recipe of braised short rib with cauliflower, brussel sprouts, grapes, and red wine miso jus. It was a delicious, tasty, and inspired dish.
